Can I get 116.8°W SatMex 5, Solidaridad 2 at 113.0°W & PAS 3R at 43.1°W with pansat 2500A in Norther california?

I have another quick questuion.
Can i use the DISH Pro 500 Antenna to get "SatMex" or i need the 30' antena?
 
You need a lot of real estate for a 30-foot antenna! ;)

Yes, you need a Ku-band dish (30 or so inches) for the Ku channels (5-digit frequencies), or a C-band dish (6 feet or more) for the 4-digit frequencies.
 
You would also have to change the L.O. settings in antenna set up screen if you change LNB's

KU band LNBF L.O.= 10750
DBS LNB L.O.= 11250

Most of the FTA on SatMex 5 is C-Band and Solidaridad 2 is only C-band, so you'll need a large dish. 10 foot would be optimal.
