Puts me in mind of how I met Mrs. Bobby. She served me breakfast in a cafe in 1973. On her last day of work before retiring in 2016 I went to her place of work and she served me breakfast one last time as a professional. It just seemed fitting.

Cooked diced potatoes, onion, ham & green chiles in the disc, bacon & homemade sausage in the air fryer and finished up with 2 eggs over easy on top of the mix from disc... OJ

Huevos Rancheros. 2 eggs over medium, hash browns, whole beans on a corn tortilla smothered in green chile sauce. Coffee.

Chorizo, hash browns and egg stuffed into a large sopapilla and smothered with green chile sauce and shredded cheddar. Coffee.

Had same basic thing yesterday with chorizo added...

Thin (think smash burger)sausage patty browned then sandwiched inside 2 corn tortillas also browned with a slice of cheese then layered with salsa and 2 eggs over easy... bacon & OJ on the side.
