Brunch: Chili-cheese-onion omelette with lots of Herdez on top....

Had a combination plate at a local Mexican food place yesterday (Primo's) red enchiladas, tamale, taco, spanish rice & beans... very good!

Chopped bell pepper, half of a white onion, 2 tbl spoons minced garlic and a green chile thrown in the food processor then mixed with 1lb. lean ground beef then browned...
Mixed with beans and served over 2 layers of tortilla chips in a bowl with grated cheddar cheese.
