Got some PS3 Questions

1- How do you delete items or demos you have D/L onto the HDD?
2- Can you change the background ? you know getting reid of the Blue sony screen .
3- Are there more games than what I am seeing in the sony store? I only see 2 or 3 pages of games in the different areas. If not , I understand just woundering if I am missing something.

Sorry for the questions, I'm use to the Xbox 360 interface.
