Upgrading satellite dish

Just replacing the LNB assembly with either that you mention will not work on the standard round 18" dish.
You need to get the Slimline dish with either of those LNBs included.
BTW, both that you linked to look like they are SWM LNBs (one output).

You can buy the Slimline dish with the 4 output LNB or the one output LNB (SWM) depending on your needs.
Tell us what you want to do and we can supply you with more information.
What receivers do you have or plan to get?
 
It takes a lot more than just replacing the dish to get HD; you need the right dish, the right receiver(s) and authorization. Given that you only have "one of the round things pointing at the dish" this is probably not a DIY project you want to undertake. You should probably call DirecTV themselves and see what upgrade options would be best for you. When you upgrade you may want to consider whole home DVR as well, which is only available on HD receivers.
 
If you are wanting to upgrade to hd, and don't have the correct dish, Directv will supply it at no cost aside the receiver/dvr.
 
Current setup: 2 SD boxes 1 HD box (HD not being used of course)

Right now I just want to get HD on the 1 HD box, I realize I will have to add this onto my package.

Eventually I might want 3 HD-DVRS on this setup, so what dish would best suite this?

Since you have a single lnb now, I suspect your local sd channels are on 101, which means you will need the sl3 lnb. There are two types, the standard and the swm. The standard uses up to four cables into the house, the swm uses only one. The swm makes it easier to install a dvr, since you only need one cable to each dvr with the swm lnb.
