Made a fresh pot of red chile so... Beef and sour cream enchilada casserole with red chile, Anasazi beans and my special Spanish rice recipe. Side salad. Locally crafted India Pale Ale.

My half dozen homemade Tamales about 1:30 pm did me for the rest of the day... (Made in early January, froze, cooked in instant pot for 45 minutes then was on warm till I got home about an hour later)Tea

It got up to 55 degrees today. I'm outside grilling up a chicken. Its the first time grilling since early December. Feels good to be back in thew groove.
