Chicken Enchiladas
3 Chicken Breasts and 3 drumsticks
1 can mushroom soup
3 Hatch Green Chile's
1 - 7 oz can chunky mushrooms
1 - 7 oz. can Herdez salsa verde
corn torillas
cheddar cheese
Cooked chicken for 11 hours on low with the mushrooms and mushroom soup and diced green chile's, added Herdez Salsa Verde about an hour before turning off heat.
Covered the bottom of a small corningware cassarole with tortillas, covered with shredded chicken breasts and grated cheese, poured the sauce over from the slow cooker then added another layer of tortillas the remainder of the chicken breasts and drumstick meat and poured the rest of the sauce over then covered with cheese and let sit for about 15 minutes... good stuff Maynard
