Divided 3 lb chub of 80/20($4.97 at Albertsons) into 8 patties this morning, just pulled a couple out of air fryer for her and myself...

Red beef enchilada casserole cooling, made sauce from scratch, with an egg on top... (was going to make a single double layer but had enough to make a casserole out of) Real Sugar Pepsi.

Glad I made a casserole, tasty, tongue burn, sinus clearing but no tears... also was made with ground brisket.

Hey I went to Texas Roadhouse today too when I went to visit mom.

Chicken tenders, baked potato with butter and sour cream, green beans, a few rolls (yummy) and lemonade.

Added 1.5 lbs browned 80/20 hb to the beans, simmered, corn tortillas on top to soften.
Tortilla bowl topped with mix with nacho and cheddar cheese, added candied jalapeños… Tea

Chicken plank sandwich (no lettuce add pickles)
Medium Onion Rings

Yumm. You could use that mix to make Frito pie. Just add some red chile, lettuce and tomato.

I was going to make enchiladas out of but didn't want to make the red sauce, still can have muchas leftovers...
